This is SUPER random, but I have always been fixated on butter. Compound butters, rolled butters, apple butter (it counts!), honey butter, butter candles (apparently that's a thing?!), churning butter... Even the butter we made back in 5th grade by shaking a jar on our school camping trip. The process fascinates me, and well, life is better with butter! So when I was mindlessly scrolling on my phone, willing myself to stay awake while nursing Thatcher in the middle of the night, I saw a video showing someone making butter in their MIXER! The silent squeal that left my body (silent, don't wake a half slumbering baby) was pure happiness!
And the best part is that all I needed was heavy whipping cream and I already had WAY too much in my fridge leftover from the holidays. It turns out there IS a limit to how much whipped cream one large family can eat.
Fast forward to the next morning and I begin to make my day 'Butter' by making butter!
4 cups of heavy cream
And then mix on medium
Mix PAST whipped cream stage, until it starts to get crumbly looking
And then there is a moment riiight before the magic happens and the butter breaks and the buttermilk splashes out
And then TA-DA!!! BUTTER!
Then it is washed and dipped into cold water and squeezed until it looks like, well.. butter!
Save all your buttermilk for later baking projects!!
Salt or season your butter to taste- For my first attempt, I went for just traditional salted butter
And there you have it! Homemade butter and buttermilk, right from the mixer!!
