With our new ovens installed we wasted no time in harvesting some of our eggplant. They have been hanging on waiting for our oven to arrive!!!

We have over 100lbs of eggplant picked and yes - there are still more in the garden. It was without a doubt - a very good year for eggplant
Time to get some of these beauties ready for winter!

Tonight we shall vacuum pack and get these delicious eggplant in the freezer.
