The Growing Tails of Ernie McDoodle: Team Herbivore

Mr. Yesteryear Acres' garden is bursting with fresh delicious veggies ready to harvest! As a vegetarian, every fresh veggie bite just makes my soul do a delicious dance, and guess what!? I am not the only one chanting "Team Herbivore!" My silly Ernie McDoodle just LOVES vegetables! My Dad always jokes (but also not joking at all) that Ernie is not allowed in the garden unsupervised! He is Mister Veggie Doodle! Today while my Dad and I were bringing in our garden bounty, Ernie McDoodle took inventory of our haul.

"Mmm! Yes Mr. Yesteryear Acres, those are perfect cauliflowers"

And Ernie McDoodle wasn't wrong! We ate all 3 of these for dinner!

Ernie say, "EGGcellent"

"What do you mean look, but don't taste?"

"Wait I have to count how many eggplants?"

"It sounds like we better make some homemade salsa Mom!"

We can't forget the okra! Okra fries are now on the menu!

"RAWR!" Let's hear it for the Herbivores!

Homemade 10 Layer Bean Dip

This evening we had a brilliant idea for dinner!  We needed something a little different as we have been eating nothing but garden veggies for days. We wanted to spice things up a bit. How about Homemade 10 Layer Bean Dip?!  Perfect for dipping our tortillas and corn chips.

I didn't take pictures of the first few layers as we didn't know how much we were going to love this until after we started eating!  The first layer is pureed black beans with chili powder, cumin, garlic and other seasonings.  The second layer is rice and the third is a baked sweet potato layer. We then cut freshly picked sweet corn off the cob for the fourth layer.

Right on top of the avocado layer

A little grated cheese and for the last 2 layers a fresh roasted tomatillo salsa and sour cream.

Mmmmmm! 

That's a 10 in my book!!!!!

Sew Comfy YA Studio

We are SEW excited because we finally got our shipment of super comfy elastic for face masks! There has been a significant elastic shortage in the United States and we have been lucky enough to have elastic in stock for the past 4-5 months.  We have been trying to find a softer elastic as we would like our masks to be as comfortable as possible and it is here!!!!!

We are ready for super comfy mask orders!!!!

We also have been working on quilted bags

and key fobs!

They come with exterior and interior pockets or interior pockets only

They are strong with nice comfortable handles

You have to be able to find your keys!

We have many fabrics to choose from

And just when I didn't think I could get any more done this week, I designed and made a purse organizer. The perfect insert for being ultra organized!

Able to hold cell phone, pens, glasses, tablet, etc. It folds and fits perfectly inside a medium or large bag.
