Garden Yummy Lunch Date

Since Mr. Yesteryear Acres and I spent yesterday cleaning out our deep chest freezers so wonderfully, today we treated ourselves to a lunch date.  I made some delicious Corn and Tomato Tortilla Soup this summer with fresh picked corn and tomatoes.  It is SO good and is one of our favorite soups.  We decided we could hardly wait for lunch time and agreed to meet at 11:30am for our soup.  Well, as you know, here at Yesteryear Acres - things don't always go as planned.  11:30am became Noon. Noon became Noon-Thirty.  Noon-Thirty became 1:00pm NO MATTER WHAT which quickly became 1:30 and at 1:45.....LUNCH WAS SERVED!  It was worth the wait though!  When I made the soup this summer, I cut the corn straight off the cob into the soup and then fill the pot with freshly picked peeled tomatoes. Mmmmm!  We used to cut tortillas into strips and then lightly fry them in peanut oil. I have to say - they are REALLY good that way but since we have made the move to eliminate unnecessary fats, we decided to forgo the deep fried tortillas.  Instead I took whole tortillas, spiced them up with delicious seasoning and then baked them in the oven with no oil.  You know what? It worked!  Our garden lunch date was delicious! Hot spicy soup on a cold afternoon....PERFECT!
